Ingredients
- 2 sliced eggplants
- ½ cup (tea) breadcrumbs
- ½ cup oats (tea)
- 2 eggs
- 1 teaspoon thyme
- ½ teaspoon of black pepper
- 1 teaspoon of salt
- ½ cup grated parmesan cheese
- Oil
Preparation Mode
- Grease a baking tray and set aside.
- Preheat the oven to medium temperature.
- Place the oats, flour, thyme, pepper and salt in a bowl. Mix and set aside.
- In a bowl, beat the eggs.
- Dip the eggplant slices in the eggs and then in the reserved flour mixture.
- Place on the baking tray and bake for approximately 20 minutes.
- Remove, sprinkle with parmesan cheese and return to the oven for approximately 10 minutes or until browned.
- Serve.

Clean the eggplants well before using them.
