Every time is time for a delicious cupcake, which despite its simplicity, is a huge success!
Ingredients
- 1 cup (tea) wheat flour
- 1 and ½ cup (tea) cornmeal
- 1 cup (tea) sugar
- 3 eggs
- 4 tablespoons of margarine
- 1 tablespoon of baking powder
Icing Ingredients (optional)
- 2 whites
- 2 cups of icing sugar
- 4 tablespoons of margarine
- 1 teaspoon of lemon juice
Dough Preparation Method
- Grease and flour a muffin pan or individual molds.
- Preheat the oven to medium temperature.
- In a mixer, beat the sugar, eggs and margarine until you obtain a creamy mixture.
- Add the flour and cornmeal and beat again.
- Add the yeast and mix.
- Distribute the dough into the molds and bake for approximately 20 minutes or until baked and golden.
- Remove and let cool.
Icing Preparation Method
- Using a mixer, beat the egg whites, add the sugar and beat again.
- Add the margarine, lemon juice and continue beating until firm.
- Cover the cupcakes with the icing.
Mom Tips
Use mimoso cornmeal; very fine, ideal for preparing cakes.
Approximate yield of 12 units.
