Every time is time for a delicious cupcake, which despite its simplicity, is a huge success!


  • 1 cup (tea) wheat flour
  • 1 and ½ cup (tea) cornmeal
  • 1 cup (tea) sugar
  • 3 eggs
  • 4 tablespoons of margarine
  • 1 tablespoon of baking powder

Icing Ingredients (optional)

  • 2 whites
  • 2 cups of icing sugar
  • 4 tablespoons of margarine
  • 1 teaspoon of lemon juice

Dough Preparation Method

  1. Grease and flour a muffin pan or individual molds.
  2. Preheat the oven to medium temperature.
  3. In a mixer, beat the sugar, eggs and margarine until you obtain a creamy mixture.
  4. Add the flour and cornmeal and beat again.
  5. Add the yeast and mix.
  6. Distribute the dough into the molds and bake for approximately 20 minutes or until baked and golden.
  7. Remove and let cool.

Icing Preparation Method

  1. Using a mixer, beat the egg whites, add the sugar and beat again.
  2. Add the margarine, lemon juice and continue beating until firm.
  3. Cover the cupcakes with the icing.

Mom Tips

Use mimoso cornmeal; very fine, ideal for preparing cakes.

Approximate yield of 12 units.
