If, recently, we told you about the Tuna Melt, an American sandwich that has been making the buzz lately, today, we are also interested in a sandwich but this time with southern accents, and particularly Italian ones: le sandwich façon cacio e pepe.

This signed creation Simone Zanoni combines two recipes in one. First of all the mozzarella in a carriagea breaded mozzarella antipasti that is combined in this preparation with the cacio e pepe, this famous pasta dish made of pepper and Pecorino. “I combined these two typical dishes of Italian cuisine to make a crazy and so gourmet creation” explain on his Instagram account the starred chef of the George, at the Four Seasons in Paris. So, you too can test this ultra-gourmet sandwich! Here’s how to do it.

Before you start cooking, the chef reveals some tips for making this sandwich to perfection. First of all, for this preparation, the choice of bread is essential. This is why the chef recommends buying it from your baker, it will only be better. On the cheese side, Simone Zanoni reveals her advice: “The trick for a perfect mozzarella: it must be very dry since yesterday !”.

Now that you know the chef’s secrets. Here’s how to make this sandwich at home.

For 2 people, you will need the following ingredients:

  • 4 slices of wholemeal bread
  • 2 x 125g mozzarella de vache
  • 200g breadcrumbs
  • 80 g of Pecorino
  • 80g egg yolks
  • 2 tbsp. water
  • 100g clarified butter
  • Start by cutting the mozzarella into 8 pieces and arrange them evenly on two slices of bread. Then salt, pepper and grate the pecorino on top.
  • Add another slice of bread to close the sandwich. Cut the crusts before soaking each sandwich in beaten egg yolks. Then roll them in the breadcrumbs.
  • Melt the butter in a frying pan and place the sandwiches in it. Once well coloured, place them on an absorbent paper and cover them again with grated pecronico.
  • Put them in the oven for a few minutes so that the cheese becomes crispy.
  • Finally, for dressing, cut your sandwiches in half and drizzle with olive oil.
