Ingredients

  • 1 turkey weighing 3 and ½ kg
  • 50 grams of butter
  • Sliced ​​Bacon
  • 1 cup of white wine
  • Peaches in syrup (without the syrup)
  • Fresh cherries
  • 1 kg of cooked Portuguese chestnuts
  • 2 chopped green apples without peel and seeds
  • 2 medium onions chopped
  • 100 grams of finely chopped pork belly
  • 150 grams of chopped bacon
  • Nutmeg
  • Black pepper to taste
  • Salt to taste
  • 50 grams of sugar
  • 1 pinch of cinnamon powder
  • 3 drops of vanilla essence

Preparation Mode

  1. After the chestnuts are cooked, peel them, crush them by hand, leaving them in pieces and some whole. Reserve.
  2. Set aside the whole chestnuts separately.
  3. Preheat the oven to 200ºC.
  4. In a pan, sauté the onion, pork belly and bacon.
  5. Season with salt, pepper, walnuts and add the apple.
  6. Turn off the heat and add the chestnuts, cinnamon, vanilla and sugar.
  7. Mix everything, reserve some of the stuffing and with the rest, stuff the turkey and sew up the opening.
  8. Place the turkey in a large roasting pan, butter the skin and cover with slices of bacon.
  9. Cover with aluminum foil and bake in a moderate oven for half an hour.
  10. Remove the paper, add the wine to the pan and bake again for approximately 2 hours or until the thermometer pops.
  11. Baste the turkey, from time to time, with the pan juices.
  12. Remove and place on a platter with the reserved whole chestnuts.
  13. Decorate with peaches and cherries.

Mom Tips

The turkey is covered with aluminum foil so that it cooks inside.
