For the recipe you will need:
- 1 aubergine
- 1 large knob of butter
- 2 cups of thick crème fraîche
- 1 small glass of cognac
- 1 tbsp crushed black peppercorns
- 2 cloves garlic
- 2 bay leaves
- Olive oil
Before starting the recipe, know that the chef uses cling film to tie up his eggplant like a leg of lamb. This allows the eggplant to hold together and prevent it from drying out during cooking.
