Of French origin, this salad is light, refined and healthy!


  • 200 grams of salted anchovies
  • 4 medium potatoes
  • ½ cup (tea) olive oil
  • Salt to taste
  • 1 head of lettuce
  • 200 grams of green beans
  • 1 celery cut into thin slices
  • 2 green peppers, seeded and cut into thin slices
  • 4 tomatoes, each cut into quarters
  • 2 boiled eggs each cut into quarters
  • 100 grams of black olives
  • 1 can of tuna, in pieces

Vinaigrette Sauce Ingredients

  • 8 tablespoons of olive oil
  • 4 tablespoons of vinegar
  • Black pepper to taste
  • Salt to taste

Preparation Mode

  1. Wash the anchovies under running water and remove the bones.
  2. Drain well and drizzle with olive oil.
  3. Cook the potatoes in salted water.
  4. Drain and, once cool, cut into slices.
  5. Clean the pod and cook in boiling salted water for 20 minutes.
  6. Drain and cut into two or three pieces.
  7. In a salad bowl, place the potatoes, green beans, lettuce, celery, tomatoes and peppers.
  8. Finish by arranging the boiled eggs, the anchovies in olive oil, the tuna and the olives.
  9. Mix the vinaigrette ingredients and pour over the salad.
  10. Mix when serving.

Mom Tips

You can find anchovies at the Municipal Market in your city.

If you prefer, add capers.

Serve as a cold starter.
