Dough Ingredients
- 1 package of crushed cornstarch biscuits (200 grams)
- 100 grams unsalted butter, softened
Filling Ingredients
- ½ liter of chilled fresh cream
- 250 grams of fresh ricotta
- 400 grams of defrosted raspberry pulp
- 4 tablespoons icing sugar
- 4 teaspoons of colorless gelatin powder
- 5 tablespoons of cold water
Coverage Ingredients
- 200 grams of raspberry pulp
- 1 cup (American) of sugar – 150 grams
- Whipped cream (optional)
- Fresh raspberries (optional)
Dough Preparation Method
- Mix the biscuit and butter until you obtain a compact dough.
- Distribute the dough on the bottom of a springform pan.
- Bake in a preheated oven (180ºC) for a short time, that is, until dry.
- Set aside until cool for filling.
Filling preparation method
- Using a mixer, at minimum speed, beat the cream with the icing sugar until you obtain a firm but creamy consistency.
- Pass the ricotta through a food processor or sieve.
- Hydrate the gelatin in cold water and dissolve it in a bain-marie.
- Add the ricotta and mix until you obtain a homogeneous cream.
- Add the raspberry pulp and prepared gelatin to the ricotta cream.
- Mix everything gently until all the ingredients are integrated.
- Spread over the reserved dough and refrigerate until firm.
Method of Preparation Covering and Assembling the Pie
- In a pan, over low heat, make jelly with the raspberry pulp and sugar.
- When the jam has cooled, spread the jam over the pie.
- Once well chilled, unmold the pie and decorate with whipped cream and raspberries.
- Keep the pie in the refrigerator until ready to serve.

Fresh cream can be found in plastic bottles or jars on the refrigerated shelves of good supermarkets.
You can also find raspberry pulp in frozen bags.
