A very tasty rice with cod that could be part of the menu at future events.
Ingredients
- 500 grams of desalted and shredded cod
- 3 cups of rice (tea)
- 1 liter of water
- 1 bunch of pre-cooked broccoli without stems (optional)
- Chopped green olives to taste (optional)
- ½ cup (tea) olive oil
- 1 chopped pepper
- 6 peeled and seedless tomatoes, chopped
- 2 cloves of garlic, chopped
- 1 chopped onion
- 2 eggs, boiled and cut into slices
- 100 grams of grated parmesan cheese
Preparation Mode
- In a pan, in olive oil, sauté the onion, garlic, pepper and tomatoes for approximately 10 minutes, stirring occasionally.
- Add the rice, cod and sauté for another 10 minutes, also stirring occasionally.
- Add the water and cook for 15 minutes with the pan covered.
- Add the broccoli and olives, mix and cook for another 10 minutes or until the water dries.
- Transfer to a refractory.
- Decorate with eggs.
- Sprinkle with cheese.
- Serve.
Mom Tips
There is already desalted cod in the market (desalted frozen). Frozen desalted meat is a quality product.
