There are certain pastries that we never tire of because they remind us of our childhood. The madeleine is one of them. Each great French pastry chef does not hesitate to reinvent this classic. Mof Eric Frechon also took on this challenge. He shared a gourmet alternative by filling his madeleines with chocolate. An easy and delicious recipe that will please young and old alike. Here’s how to do it.

Simple to make and absolutely irresistible, these madeleines are perfect to prepare as a family. Get to the stove!

For 4 people, you will need:

  • 1 small pot of spread
  • 3.5 cl of milk
  • 100 g of sugar
  • 1 dash of liquid vanilla
  • 125 g of flour
  • 125 g melted butter
  • 2 small eggs
  • ½ packet of baking powder
  • 1 knob of butter (to butter the mold)
  • 1 tablespoon of flour (to flour the mold)
  1. Start by melting the butter over low heat in a saucepan.
  2. In a salad bowl, beat the eggs then butter and flour the madeleine molds.
  3. Then, preheat the oven to 210°C.
  4. In a salad bowl, mix the beaten eggs, sugar with milk and vanilla.
  5. Add the melted butter, flour and baking powder.
  6. In the madeleine molds, pour the preparation halfway up the mold, then the spread and finally cover with another layer of madeleine dough.
  7. Place everything in the oven and cook for 10 minutes.

To replace the spread, you can opt for jam for example. After cooking the madeleines, simply garnish them with jam using a paper squid. It’s up to you !
