Kulich, a traditional Russian Easter cake, resembles a panettone covered with royal icing. The Easter cake is a centuries-old tradition on Resurrection Sunday.
Ingredients
- 3 cups (tea) of wheat flour
- ½ cup (tea) sugar
- ½ cup unsalted butter, melted
- 1 cup of warm milk
- 1 pinch of salt
- 3 eggs
- ½ cup of candied fruit
- ½ cup of raisins
- ½ cup toasted and chopped almonds
- 1 teaspoon of rum or brandy
- Vanilla drops
- 1 envelope of dry yeast
Preparation Mode
- Soak the raisins in the rum.
- Mix the yeast into the milk, add the sugar, mix and let it rest.
- Add 1/3 cup (tea) of flour, mix and leave to rest until the mixture becomes frothy.
- In a bowl, mix the egg yolks with the sugar, vanilla and salt.
- Add the butter, yeast and mix well.
- Add the rest of the flour until you get a light, non-sticky dough.
- Place the dough in a greased bowl, cover and let rise until doubled in size.
- Preheat the oven to 200ºC.
- Knead the dough, add the fruits and almonds.
- Place the dough in the pan and let it rise again until it doubles in volume.
- Bake for 15 minutes and then reduce the temperature to 170ºC.
- Let it bake for approximately another 35 minutes.
- Remove from the oven and let cool.
- If roasted in a pan; remove from pan.
Coverage Ingredients
- 1 beaten egg white
- 2 cups of icing sugar, sifted
- 1 tablespoon of lemon juice
- Colorful sprinkles to decorate
Coverage Preparation Method
- Using a mixer, beat the egg whites until stiff peaks.
- Add, constantly beating, little by little the sugar and lemon juice.
- Cover the Kulich with this cream while it is still hot.
- Decorate with sprinkles.
Mom Tips
You can bake the Kulich in disposable paper pans suitable for panettone or in a small round baking dish with very high edges that has been greased and lined (bottom and sides) with baking paper.
This coverage is traditional, which is why the Kulich always have a white coverage.
