Ossobuco with tomato sauce

Ingredients

  • 2 kg of slices of ossobuco
  • 2 tablespoons of olive oil
  • 2 tablespoons butter
  • 1 cup of wheat flour
  • 3 crumpled garlic cloves
  • 1 Large peeling carrot
  • 2 medium chopped onions
  • 1 kg of skinless and seedless tomatoes, chopped
  • 1 teaspoon dry basil
  • 2 tablespoons of tomato extract
  • 1 cup of broth
  • 2 cups of dry white wine
  • Salt to taste

Preparation mode

  1. Make 2 to 3 small cuts at the ends of each ossobuco piece, with the aid of a knife or scissors.
  2. Pass every piece of ossobuco in the seasoned wheat flour.
  3. In large pan, heat the butter with the olive oil and fry the slices of ossobuco gradually until they give all sides.
  4. Remove from pan and set aside.
  5. In the same pan, cook for approximately 15 minutes, carrots, garlic and onion with the pan covered.
  6. Add, putting on top of everything, the meat sprinkled with basil.
  7. Add the tomato extract, the broth, the tomatoes and the wine.
  8. If necessary, add enough water for the meat to be covered.
  9. After boiling, cover the pan, lower the heat and let it cook until the meat is tender.
  10. Being soft, remove the meat by putting it refractory and keeping it hot.
  11. Keep cooking the sauce, stirring constantly for another 15 minutes.
  12. Being ready, pour over the meat and serve.

Mother Tips

Yield of 8 portions.

Click on meat broth or chicken. Homemade broths are more tasty.
