Ossobuco with tomato sauce
Ingredients
- 2 kg of slices of ossobuco
- 2 tablespoons of olive oil
- 2 tablespoons butter
- 1 cup of wheat flour
- 3 crumpled garlic cloves
- 1 Large peeling carrot
- 2 medium chopped onions
- 1 kg of skinless and seedless tomatoes, chopped
- 1 teaspoon dry basil
- 2 tablespoons of tomato extract
- 1 cup of broth
- 2 cups of dry white wine
- Salt to taste
Preparation mode
- Make 2 to 3 small cuts at the ends of each ossobuco piece, with the aid of a knife or scissors.
- Pass every piece of ossobuco in the seasoned wheat flour.
- In large pan, heat the butter with the olive oil and fry the slices of ossobuco gradually until they give all sides.
- Remove from pan and set aside.
- In the same pan, cook for approximately 15 minutes, carrots, garlic and onion with the pan covered.
- Add, putting on top of everything, the meat sprinkled with basil.
- Add the tomato extract, the broth, the tomatoes and the wine.
- If necessary, add enough water for the meat to be covered.
- After boiling, cover the pan, lower the heat and let it cook until the meat is tender.
- Being soft, remove the meat by putting it refractory and keeping it hot.
- Keep cooking the sauce, stirring constantly for another 15 minutes.
- Being ready, pour over the meat and serve.

Yield of 8 portions.
Click on meat broth or chicken. Homemade broths are more tasty.
