Deliciously crunchy and slightly tangy, kimchi seduces us with its intense flavors. A true national pride, it is present at almost every meal. In addition to being very tasty, it is also particularly recommended for the health of our microbiota. What more could you ask for?

If you’re used to going to Korean restaurants, you’ve probably already tasted kimchi. Emblematic of Korean gastronomy, this traditional dish consumed for more than 2000 years is composed of fermented vegetables (kimchi literally means “submerged vegetables”). We could define it as the Korean version of sauerkraut!

Traditionally, kimchi is made from cabbage, carrot, white radish, garlic, chili pepper and ginger. And although the recipe has evolved over the centuries, the principle remains the same: kimchi is made with lacto-fermented vegetables, which give it that characteristic tangy taste that we love so much!

Kimchi is both good tasting and good for your health! Very nutritious, it provides in particular vitamins B, C and K, as well as beta-carotenea powerful anti-oxidant that fights free radicals and preventse aging of cells and the appearance of certain cancers. Kimchi also provides many minerals, including du potassium, du fer et du calcium. The lactofermentation technique promotes the proper preservation of these nutrients. It also acts as a real “booster” of antioxidant molecules beneficial to the body.

Another benefit of this emblematic Korean dish is its action on intestinal health. Consuming kimchi regularly has recognized effects for our microbiota. Probiotics that it contains (and which result from fermentation) largely contribute to the maintenance of healthy intestinal flora. Its prebiotics, for their part, promote good digestion and prevent inflammation of the intestines.

But that’s not all! Kimchi is also known for its effects on the cardiovascular system. Asian researchers have shown that regular consumption of kimchi allows reduce bad cholesterol levels, which, when consumed in excess, is a source of cardiovascular problems.

Finally, as it has a satiating effect while remaining very light in calories (around 27 kcal per 100 g), kimchi could also help lose weight.
